Almost the whole family gathers and this week, the temperatures are even high enough to break out the grill and barbecue. I love baking up special treats with my kids in preparation for family dinners. While I love desserts of all kinds, to be a true dessert obsession for me, it must be chocolate. This recipe for brownie flower sandwiches delivers big time! The smooth strawberry frosting filling helps balance the stacked brownies, they are a chocolate lovers dream come true. Stacked Strawberry Brownie Ingredients
Brownie mix: You will need one 15 ounce box of Pillsbury™ Chocolate Fudge Brownies, baked according to package directions.
Strawberries: Using 9-12 fresh strawberries, washed, destemmed and finely diced, will give the frosting even more amazing flavor.
Frosting: For the brownie sandwich filling you need 1 tub of Pillsbury™ Vanilla Frosting, any type. You can use a cream cheese type or a whipped, whatever you choose will be amazing.
Sprinkles: Adding colorful sprinkles to the top of each flower brownie makes them colorful and fun, kids and adults can’t resist a sprinkled treat.
How to make Easy Stacked Strawberry Brownies
Brownies
Start by spraying a 9 x 13 baking pan with non-stick spray or line it with parchment paper. Proceed to make and bake the brownies according to the package directions. Let them cool completely before proceeding.
Next, cut the pan of brownies in half or quarters, whichever is easier for you to be able to remove the entire piece out of the pan. Remove each section of brownie and place on a cutting board. Using a medium flower cookie cutter continue to cut shapes into the brownies. The flower cookie cutter I used measured 2.5″ across, I was able to easily cut 14 flowers and had scraps left over for snacking (my kids loved this part).
Frosting
Now, scoop the frosting out of the container and into a medium bowl. You can use any variety of Pillsbury™ frosting, but we love the Vanilla Marshmallow flavor. Next, beat the frosting for about 1 minute so that it is nice and smooth.
After that, divide the frosting in half, putting half of it into a pastry bag.
With the other half of frosting, wash and finely dice the strawberries, then add to the bowl of frosting and stir well to combine.
Assemble
Proceed to take one piece of a brownie flower cut-out and put a spoonful of frosting with strawberries on top. Place another brownie flower cut-out on top to make a brownie sandwich.
Top each brownie flower with a piping of buttercream, sprinkles and a slice of strawberry. Repeat with remaining brownies and frosting.
Serve immediately and enjoy!

HOW LONG ARE BROWNIE SANDWICHES GOOD FOR?
You can keep these brownie in an airtight container in the fridge for up to 1 week. These taste best when fresh and enjoyed in the first few days, but I highly doubt there will be any leftovers.
CAN I FREEZE BROWNIE COOKIES?
Yes, you can freeze these brownies in an airtight container for up to 3 months. If you do this, I recommend not adding the frosting until after the brownies have been thawed.
Alternate frosting option
If you want to make a homemade whipped cream instead of using a store bought option, here is a recipe for an amazing alternate option.
HOW DO YOU MAKE STABILIZED WHIPPED CREAM?
If you want to make whipped cream ahead of time, you can, but you have to stabilize it. To make stabilized whipped cream, you will need the following ingredients:
- 4 ounces of cream cheese (softened to room temperature)
- 1/3 cup powdered sugar
- 1 tsp vanilla
- 1 cup heavy whipping cream
Beat the whipping cream just until soft peaks form.
Add in the cream cheese, powdered sugar and vanilla. Whip on high until mixture is smooth.
Store in the refrigerator until ready to use, up to 3 days.
A little tip for making whipped cream faster: use a metal bowl and place the bowl in the freezer for about 30 minutes before you make the whipped cream. This will significantly decrease the amount of time that you will need to beat the whipped cream – the process will go much faster!
