How to make Bacon Cream Cheese Stuffed Mushrooms
To make this simple stuffed mushrooms recipe start by preparing the mushrooms. Remove the mushrooms from their packaging and rinse well in a colander under cold water. Place on a paper towel and pat dry to remove any stubborn dirt.
Now that the mushrooms are all clean and dry, you are going to remove the stems. To do this simply press the stem to one side of the mushroom until it ‘pops’, then pull the stem from the mushroom. Continue this process until all the stems have been removed. Do not throw the stems away.
Next, you are going to take all of those stems that you took out of the mushrooms and chop them down into little pieces.
Slice the bacon into bite sized pieces. In a skillet over medium heat, cook the sliced bacon until crispy. Remove from the pan to a paper towel lined plate. Drain the bacon grease from the pan.
Place the chopped mushroom pieces into the pan and cook and stir until they are tender, about 3-4 minutes. Take out of the pan and place in a clean bowl once they are done cooking.
Now that the bacon and mushrooms have been cooked, you can assemble the filling for the stuffed mushrooms.
In a large mixing bowl combine the softened cream cheese and cheddar cheese. Stir together with a wooden spoon until smooth. Add in the bacon, mushroom pieces, chopped jalapeno and garlic powder. Continue stirring and folding the mixture over until everything is well combined.
Place the mushroom caps, top side down on a baking sheet. Fill each cap with some of the bacon cheddar jalapeno mixture. I like to overfill the mushrooms at this step. The cream cheese won’t really melt and run all over, so go big and fill those mushrooms until they are bursting. They are so much better that way!
Once you have got them all filled and balanced, place in a 375ºF oven for 10-15 minutes, until the cheese is warm, bubbly and golden on top.
Remove from the oven and carefully place on a serving plate. Enjoy these stuffed mushrooms while they are still hot!

- Cremini mushrooms
- bacon
- jalapeno
- cream cheese
- cheddar cheese; I just used mild, but sharp would also work great
- garlic powder
Can I make Stuffed Mushrooms ahead?
You can make this recipe ahead of when you will be serving it. To make ahead, simple make the filling, fill the mushroom caps and store in an air tight container in the refrigerator up to 3 days before you will be serving these.
To cook, heat the oven to 375ºF and bake for 15-25 minutes, or until the cheese is bubbly and heated through.

Ingredients
- 2 8 oz packages Cremini mushrooms, washed and stems removed
- 6 slices bacon
- 1 8 oz cream cheese, softened
- 1 cup cheddar cheese, grated
- 1 jalapeno, diced
- 1 tsp garlic powder
Instructions
- Preheat oven to 375ºF.
- Dice the stems of the mushrooms. Slice the bacon into bite sized pieces.
- In a skillet over medium high heat, cook the bacon until crisp. Remove the cooked bacon from the pan to a paper towel lined plate. Drain the grease from the pan.
- Place the mushroom stems in the pan and cook and stir until tender, about 3-4 minutes. Remove from the pan to a clean bowl.
- In a large mixing bowl, mix together the cream cheese and cheddar cheese. Add in the bacon pieces, mushrooms, diced jalapeno and garlic powder.
- Place the mushroom caps top side down on a baking sheet. Fill each cap with some of the bacon jalapeno cheddar mixture.
- Bake the mushrooms for 10-15 minutes until the cheese is melted and heated through.
