RANCH CHICKEN PIZZA

Ingredients

Crust

  • 1 cup hot water 110 degrees F
  • 2 tsp yeast 1 packet
  • 1 TBSP sugar
  • 1 ½ tsp salt
  • 3 cups flour
  • 2 TBSP olive oil

Sauce & toppings

  • ½ cup ranch dressing
  • 3 oz cream cheese softened
  • 2 TBSP tomato paste or pizza sauce
  • 1 cup chopped cooked chicken
  • ½ cup Mezzetta Roasted Bell Peppers cut into bite-sized pieces
  • 2.25 oz can of sliced black olives drained
  • ½ cup spinach optional
  • 2 cups mozzarella cheese shredded

Instructions

  • Prep: Before you begin the crust and pizza assembly process, you need to cook the chicken. I find using a rotisserie chicken simplifies this step, but when I have time, I cook it in the crockpot the day before.
  • Crust: Mix the yeast, warm water, and sugar in a bowl and let it sit for 10 minutes to foam up and activate.
  • In a separate bowl, sift together the flour and salt. Add the dry ingredients to the activated yeast water and add the olive oil, mix until combined.
  • Knead the dough for several minutes until it is smooth and elastic. Then place the dough in an oiled bowl and allow to rise until it has doubled in size.
  • Bake crust: Get the oven preheating to 350 degrees F. Once the dough has doubled in size, proceed to roll it out onto a pizza pan or pizza stone.
  • Place the crust into the preheated oven and bake for about 7-8 minutes before removing from the oven and adding toppings. You want the crust to bake a little beforehand, so it doesn't get burnt or too crispy once the toppings are added.
  • Remove the crust from the oven, then increase the temperature to 450degrees F.
  • Assemble: In a bowl, mix the ranch, cream cheese, and tomato paste until well combined. Spread the sauce over the top of the pizza crust.
  • Sprinkle on the chicken, roasted bell pepper, olives, and spinach on top of the sauce. Then top all those ingredients with the cheese on top.
  • Bake: Place the pizza back in the oven and bake the oven at 450 degrees F for 10-12 minutes or until the crust is golden brown and the cheese has melted. Slice pizza, serve, and enjoy!

Notes

Leftover homemade pizza should be stored in an airtight container, in the fridge, and it will last up to 2-3 days. Reheat in the microwave or in the oven.
