PHILLY CHICKEN SLIDERS

Ingredients

  • 3 TBSP melted unsalted butter melted & divided
  • ½ cup green bell pepper thinly sliced
  • ½ cup red bell pepper thinly sliced
  • 1 medium yellow onion thinly sliced
  • 12 Hawaiian rolls
  • 12 slices provolone cheese
  • 3 cups chicken cooked & shredded
  • 2 tsp minced dried onion
  • 1 tsp poppy seeds
  • ½ TBSP parsley fresh minced

Instructions

  • Prep: Before beginning to assemble the sandwiches, you need cooked and shredded chicken. Use a store bought rotisserie chicken or do it at home with this easy recipe.
  • Once the chicken is cooked & ready, start preheating the oven to350°F. Spray the bottom of a 9x13 baking dish with cooking spray and set it aside.
  • Thinly slice the red and green bell peppers, as well as the onion. Set both aside.
  • Sauté veggies: In a large skillet add 1 tablespoon of butter and melt over medium high heat. Add the sliced bell peppers and onions. Sauté the veggies for 3-5minutes, or until they have softened. Remove vegetables from the heat and set aside.
  • Assemble: Slice your sheet of Hawaiian rolls in half crosswise. Place the bottom half of the rolls into the prepared baking dish. Then add 6 slices of cheese to the bottom layer of the rolls.
  • Top the cheese with the shredded chicken, followed by the sauteed onions and peppers. Add the remaining 6 slices of cheese on top of the vegetables and place the top bun layer onto the sliders.
  • In a small bowl melt the remaining 2 TBSP of butter (in the microwave), then add in the dried onion and poppy seeds. Generously brush the butter across the tops of the slider buns.
  • Bake: Cover the baking dish with foil and bake in the preheated oven for 15-20 minutes, or until the sliders are warmed through and the cheese is melted. Optional: Place the cooked sliders under the broiler for 2-3 minutes to brown the top of the rolls. Watch carefully as they will brown quickly.
  • Garnish the tops of the warm sliders with the fresh minced parsley and serve immediately, enjoy!

Notes

Store leftovers in an airtight container for up to 3-4 days in the refrigerator.
