Ingredients

  • 16 oz hash browns refrigerated or frozen (thawed)
  • 3 cups chicken cooked & diced
  • 2 cups Cheddar Jack cheese divided
  • 7 oz Onion Chive cream cheese
  • 1 ½ cups milk
  • ½ tsp season salt
  • tsp black pepper
  • 6 oz french fried onions

Instructions

  • Prep: Before you can begin assembling the casserole, the chicken needs to be cooked and diced. You can use a store-bought rotisserie chicken or this crockpot recipe works great too.
  • Once the chicken is cooked, get the oven preheating to 350°F. Spray a 9x13 glass baking dish with non-stick spray and set it aside.
  • Assemble: In a large bowl, mix the hash brown potatoes, cooked chicken, 1 cup of cheddar Jack cheese, cream cheese, milk, and the seasonings until well combined. Spread the mixture into the prepared pan, top the casserole with the remaining 1 cup of cheese.
  • Bake: Cover the pan with foil, place it in the preheated oven, and bake for 35 minutes.
  • After the 35 minutes, remove the casserole from the oven, remove the foil, and sprinkles the french-fried onions on the top. Continue to bake for an additional 10 minutes. Serve immediately and enjoy!

Notes

Chicken Hash Brown Casserole can be stored in the refrigerator for up to 3-4 days. Make sure to cover it tightly with plastic wrap or aluminum foil to keep it fresh.
