Ingredients

  • 3 cups chicken cooked & diced
  • ¼ small red onion diced
  • 2 celery stalks diced
  • 2 hard boiled eggs chopped
  • 1 cup mayonnaise
  • ¼ tsp garlic salt
  • ¼ tsp pepper
  • 16 crescent rolls 2 eight count cans
  • Parsley for garnishing

Instructions

  • Prep: The chicken needs to be cooked to begin assembling the recipe. Try this easy shredded chicken recipe, it is a simple way to prep the meat ahead of time.
  • You need hard boiled eggs for this dish as well. If you are not familiar with this method, give this oven hard boiled eggs recipe a try.
  • Once you are ready to get the chicken salad started, chop and dice the onion and celery as well. Get the oven preheated to 400°F too.
  • Assemble salad & chill: In a large mixing bowl combine the chicken, onion, celery, eggs, mayonnaise, garlic salt and pepper. Stir to combine, then cover and refrigerate.
  • Rolls: Meanwhile shape 16 (12 inch) sheets of aluminum foil into cones.
  • Slice each crescent roll triangle into strips. Wrap the strips around the foil molds making a carrot shape. Bake for about 8 minutes until golden brown. Set aside to cool completely.
  • Carrot assembly: Carefully remove the foil from inside the rolls. Be patient, they will come out!
  • Stuff each crescent roll carrot with the chicken salad mixture. Top with parsley to resemble a carrot top. Serve & enjoy!

Notes

These chicken salad crescent rolls are best served immediately after stuffing. If you have leftovers, you can store them in an airtight container in the refrigerator for up to 2 days.
