Ingredients

  • 3 cups semi sweet chocolate chips
  • 14 oz sweetened condensed milk
  • 3.5 ounce marshmallow cream
  • 2 tsp vanilla extract
  • ¼ tsp salt
  • 2 cups toasted pecans chopped
  • 30 soft caramels unwrapped (Kraft)
  • 1 TBSP heavy cream
  • Sea salt flakes optional

Instructions

  • Prep: Spray the inside of a 9x9 baking dish with non-stick cooking spray and line it with parchment paper. The cooking spray will help prevent the parchment paper from sticking to the pan and make for an easy removal.
  • Chocolate & pecan layer: In a saucepan, over medium-low heat, melt the chocolate chips and sweetened condensed. Melt the chocolate slowly, so it does not burn.
  • Once melted and smooth, stir in the marshmallow cream. Spread half of the chocolate mixture over the bottom of the prepared pan. Press the pecans over the top of the chocolate mixture.
  • Caramel layer & assemble: In a microwave-safe bowl, melt the caramel candies (unwrapped) with the heavy cream for 30 seconds. Stir together until melted and smooth.
  • Spoon half of the caramel sauce over the top of the pecans. Top it off with the remaining half of the chocolate mixture and the remaining pecans, to create multiple layers of chocolate and pecans in this fudge.
  • Top & Serve: Drizzle the top with any remaining caramel you may have. If the caramel is not soft enough to drizzle, reheat in the microwave for another 10 seconds. If desired, sprinkle the top of the fudge with flakey sea salt.
  • Let the fudge cool in the refrigerator for 30-60 minutes and then cut into small squares. Serve and enjoy!

Notes

Homemade fudge lasts about 1 to 2 weeks at room temperature, 2 to 3 weeks in the fridge, if stored in an airtight container.
Fudge can be frozen as well. It will last up to 3 months in the freezer when stored in an airtight container.
