- 1 ½ pounds fresh strawberries sliced lengthwise
- 2 cups creamy natural peanut butter
- 2 cups dark chocolate chips
- 1 tablespoon coconut oil
- pink Himalayan salt for topping
Prep Your Tray: Line a baking sheet with parchment paper.
Lay the Strawberries: Arrange sliced strawberries on the parchment, filling as many gaps as possible. It’s okay if the whole tray isn’t covered.
Melt the Peanut Butter: Microwave peanut butter in 30-second bursts (about 1 minute total) until pourable.
Pour and Spread: Pour the peanut butter evenly over the strawberries and spread it smooth with a spatula.
Flash Freeze: Freeze for 10-15 minutes while you prep the chocolate.
Melt the Chocolate: Combine chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until melted and smooth.
Top It Off: Pour the melted chocolate over the peanut butter layer and smooth it out. Sprinkle with a pinch of pink salt.
Freeze Until Set: Place the tray back in the freezer for 2-3 hours, or until fully frozen.
Slice and Serve: Once frozen solid, break or slice into squares. Enjoy!
