Pumpkin Protein Pancake Parfaits

Pumpkin Protein Pancake Parfaits combine the comforting flavors of fall with a nutritious twist. These yogurt parfaits layer fluffy pumpkin pancakes made from Krusteaz Buttermilk Protein Flapjack & Waffle Mix, providing a protein boost that energizes any morning!

Ingredients

  • 2 cups Krusteaz Buttermilk Protein Flapjack & Waffle Mix
  • 2 cups water
  • 1 cup canned pumpkin
  • ½ tsp pumpkin pie spice
  • 2 cups vanilla Greek yogurt

Instructions

  • Prep: Heat the griddle to 375°and lightly grease with butter or non-stick cooking spray.
  • Batter: In a medium bowl, whisk the flapjack mix, water, pumpkin puree, and pumpkin pie spice, just until combined.
  • Cook: Pour about ¼ cup of batter, per pancake, onto the griddle and cook for about 2 minutes, per side, turning once. Remove pancakes from the griddle once cooked and allow them to cool for about 3-4 minutes.
  • Assemble: For each parfait cup, cut up two pancakes into bite-sized pieces. Place half of the pieces in the bottom of a parfait dish. Top with ¼ cup of yogurt, and then repeat the layers until the dish is full. (I used a mini pumpkin cookie cutter to cut out tiny pumpkin-shaped pancakes to place on top just for fun!) Serve immediately and enjoy!

Notes

Pumpkin Protein Pancake Parfaits are intended to be prepared and enjoyed immediately. They do not save well, the yogurt will make the pancakes soggy and they won't hold up well.
