Instructions

  • Preheat the oven to325°F and line two baking sheets with parchment paper or a silicon baking mat. Set aside.
  • In a medium size bowl, microwave the cocoa powder, butter, and shortening for 1 ½ - 2 minutes. Whisk until the cocoa powder dissolves. Stir in the sugar until well-blended.
  • Add in the eggs and vanilla extract, stir until combined. Proceed to add the flour and salt, mix well and then fold in the chocolate chips. Drop the dough by tablespoons onto the prepared baking sheet.
  • Bake for 12-14 minutes, the tops of the cookies should crack just slightly. Allow cookies to cool for about 2-3 minutes before removing from pan and let them cool before topping with the glaze.
  • Easy Chocolate Glaze: In a microwave safe bowl, heat the heavy cream and butter in the microwave for 2 minutes. Add the chocolate chips and microwave for 30 additional seconds. Let mixture sit for 1 minute, then whisk gently until smooth. Be sure to let chocolate glaze cool for about 5 minutes, then take each cookie and spoon the glaze on top. Sprinkle with peppermint pieces and let cool to set for about 5-10minutes.
  • Alternate option: Vanilla Glaze Topping: Whisk the melted butter, powder sugar, vanilla extract and milk together until smooth. Immediately spoon onto top of cookies and sprinkle with peppermint pieces. Let cookies cool to set. Serve cookies and enjoy!

Christmas cookies stay fresh for up to 5-7 days at room temperature when stored in an airtight container.
Freeze cookies for up to 2-3 months, but wait to add toppings until you're ready to enjoy them. Thaw at room temperature for about an hour before adding topping.
