For the Filling:
- 8 oz cream cheese softened, (227g)
- 15 oz sweetened condensed milk 300ml
- ½ cup key lime juice 4fl.oz, 118ml
- whipped cream and lime slices for topping
In a medium mixing bowl, stir together the graham cracker crumbs, granulated sugar and melted butter. The mixture will feel like damp sand and will stick together when pressed. Press the graham cracker mixture up the sides and in the bottom of a 9 inch pie plate. Place in the fridge to chill while we make the filling.
In a stand mixer, beat the cream cheese on high until smooth, about 2 minutes.
Add the sweetened condensed milk and the key lime juice and continue beating on medium speed until the all the ingredients have mixed in, about 2 minutes.
Pour the filling into the graham cracker crust. Chill in the fridge for at least 4 hours or up to overnight.
When you are ready to serve, top the pie with whipped cream and fresh lime slices.
Store leftovers, covered in an airtight container the fridge for up to 4 days.
Pie can be frozen for up to 3 months.
