Prep: Spray a baking sheet with non-stick cooking spray and set it aside. Preheat the oven to 400° F.
Dough: In a bowl, combine flour, baking powder, salt, and cream of tartar; cut in the butter until crumbly. (You can alternately grate frozen butter instead!) Stir in the milk and honey just until moistened.
Shape: Turn onto a floured surface; knead gently 8-10 times. Roll out to 1-in. thickness; cut with a floured 2” biscuit cutter. (Tip: if you cut 9 biscuits and have leftover dough, divide it equally among the other biscuits and place it on the underside of each biscuit, so that you can use all the dough, but still preserve the pretty biscuit tops.)
Bake: Place the biscuits 1 in. apart on a greased baking sheet. Bake at 400°F for 12-15 minutes or until golden brown. Serve with butter and additional honey. Enjoy!
Leftover biscuits will last for about 2 to 3 days when stored in an airtight container at room temperature.
Honey & milk biscuits can be frozen. Place them in an airtight container or freezer bag. When stored properly, they can last for up to three months.
