Funfetti Scones are soft, buttery, rich in vanilla flavor, and packed with sprinkles! With a simple glaze on top, these scones are perfect for brunch or an afternoon treat.
Preheat the oven to 375° F. Line a baking sheet with parchment paper. Set aside.
Add the flour, baking powder, and sugar to a large mixing bowl and whisk to combine.
Add the cold butter chunks to the mixing bowl and mix with your hands, ensuring the butter is thoroughly worked into the dry ingredients and the entire mixture is moistened.
Create a small well in the center of the dry ingredients/butter mixture and pour the creamer, milk, and vanilla bean paste into the well. Mix with your hands, working from the bottom up, until fully combined.
Turn the dough onto a floured surface, add the sprinkles, and knead until all the sprinkles are fully incorporated throughout the dough.
Form the dough into a thick disk shape and place it on the prepared baking sheet.
Cut the dough disk carefully into 6 equal triangles using a sharp knife.
Bake the scones for 30 minutes until lightly golden brown.
Remove the scones from the oven and allow them to rest on the baking sheet for 5-10 minutes before separating them.
While the scones are resting, add the powdered sugar and 2 tablespoons of vanilla creamer to a small mixing bowl and mix until smooth. Add the additional tablespoon of creamer if the glaze is too thick.
Drizzle the glaze over the scones. Add a few drops of food dye to a portion of the glaze if desired.
Top scones with extra sprinkles if desired.
Notes
Leftover scones can be stored in an airtight container at room temperature for up to 3 days. If you store them in the refrigerator, they will stay fresh for up to 1 week.
