Ingredients

  • ¾ cup mayonnaise
  • ¾ cup plain yogurt
  • 2 tsp curry powder
  • ½ tsp onion salt
  • 4 cups chicken cooked & diced
  • 1 cup apples chopped
  • 1 cup grapes sliced
  • 1 cup celery chopped
  • 2 TBSP sweet onion finely chopped

Instructions

  • Prep: Prepare some ingredients before assembling the salad. The chicken needs to be cooked and diced. Try this simple shredded chicken recipe or you can use a store-bought rotisserie.
  • Wash, core, and chop the apple into small chunks. Wash, de-stem and slice the grapes in half or quarters (depending on their size). Clean and chop the celery and lastly, finely chop the onion.
  • Dressing: In a large bowl whisk the mayonnaise, yogurt, curry powder, and onion salt until well combined.
  • Assemble; Fold in the chicken, apples, grapes, celery, and onions. Stir well to coat all the ingredients with the dressing well. Serve the chicken salad on mini croissants or your choice of bread (or lettuce cups) and enjoy!

Notes

Left over chicken salad can be kept in the refrigerator for up to 3-4 days. It is important to store it in an airtight container to maintain its freshness.
