Ingredients

  • 1 lb lean ground beef
  • 1 medium yellow onion finely diced
  • 1 green bell pepper finely diced
  • 1 packet taco seasoning
  • 10 oz can Rotel tomatoes with chilies juice drained
  • 1 cup salsa
  • 1 cup sour cream
  • 1 cup corn kernels canned or frozen and thawed
  • 10 oz bag Nacho Cheese Doritos crushed
  • 3 cups shredded cheddar cheese

Instructions

  • Preheat oven to 350°F. Grease a 9x13-inch baking dish with cooking spray, and set aside.

MAKE THE TACO FILLING

  • Add the ground beef, diced onions, and bell peppers to a large skillet over medium-high heat and cook, breaking the beef up with a spoon, until the meat is fully cooked and the vegetables have softened. Drain any excess fat.
  • Remove from heat and stir in taco seasoning, rotel, salsa, sour cream, and corn until combined.

ASSEMBLE THE CASSEROLE

  • Add half the crushed Doritos to the bottom of your prepared baking dish, followed by 1 cup of shredded cheese.
  • Spread the meat mixture evenly across the top of the chips and cheese.
  • Add half of the remaining shredded cheese across the top of the meat, followed by the remaining Doritos, and then the leftover cheese.

BAKE AND SERVE

  • Cover the baking dish with foil tightly and bake for 18-20 minutes, until the dish is cooked through and the cheese is bubbly.
  • Serve with your favorite taco toppings such as sour cream, diced tomatoes, and cilantro.
