- 2 cups vanilla Two Good yogurt (or another brand of vanilla Greek yogurt)
- 2 tablespoons pure maple syrup
- ½ cup natural creamy peanut butter (warmed in the microwave for about 15 seconds)
- ½ cup semi-sweet chocolate chips (plus a few extra for topping)
In a large mixing bowl, whisk together the yogurt, maple syrup, and warmed peanut butter until smooth and creamy. The peanut butter will incorporate more easily if it’s been gently warmed first. The mixture should look thick but pourable.
Stir in the chocolate chips, distributing them evenly throughout the yogurt mixture. This ensures every bite has that perfect peanut butter-chocolate combo.
Spoon the mixture evenly into a popsicle mold. I recommend using a mold that holds at least 8 bars so the portions are just right.
Sprinkle a few extra chocolate chips on top of each bar for a little texture and visual appeal. Insert popsicle sticks into each bar.
Freeze overnight until fully solid. When you’re ready to enjoy, run the mold briefly under warm water to help release the bars easily.
