BROWN SUGAR DROP BISCUITS

Instructions

  • Preheat oven to 400°.
  • In a medium bowl, mix flour, whole wheat flour, baking powder, baking soda, and salt.
  • Use a pastry blender to cut in the butter until the mixture is crumbly.
  • Stir in enough apple juice to form a dough that is just moist enough to drop from a spoon. Start with ½ cup and increase by 1 tablespoon at a time until you get the right consistency.
  • Mix the topping ingredients in a small bowl.
  • To form each biscuit, drop a teaspoonful of dough onto a lightly greased baking sheet or one that is lined with a silicone baking mat. Sprinkle about ½ tsp of the topping in the center. Top with another teaspoonful of biscuit dough and then another ½ tsp of the topping. The biscuits should be about 2 inches apart on the baking sheet.
  • Bake for about 10 minutes or until lightly browned. Biscuits are better warm so eat them right away!
