- 16 oz box of yellow cake mix 16-18 oz box
- 1 ½ cup quick oats
- ½ cup packed brown sugar
- 2 tsp ground cinnamon
- 1 large egg
- ¾ cup applesauce
- 1 cup apple peeled, cored, & finely chopped
Prep: Preheat the oven to 350°F. Line two baking sheets with parchment paper or grease with nonstick cooking spray. Set them aside.
Prep the apple by peeling, remove the core, then dice into small chunks.
Dough: In a large bowl, combine the dry cake mix, oats, brown sugar, and cinnamon. Whisk to combine.
In a separate bowl, mix the egg, applesauce, and chopped apple together until well combined.
Combine the wet ingredients with the dry ones, stir well until all the ingredients are fully incorporated.
Bake: Drop the dough by heaping teaspoonfuls onto the prepared baking sheets. Place in the preheated oven and bake for 10-12 minutes or until the cookies are slightly golden brown.
