Easy Easter M&M Blondies

- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup granulated sugar
- ½ cup packed light brown sugar
- 12 tablespoons salted butter melted
- 1 ½ teaspoons vanilla extract
- 2 large eggs
- 1 cup pastel M&Ms plus additional for topping if desired
- ½ cup small sprinkles plus additional for topping if desired
Preheat the oven to 350° F. Grease a 13x9 baking dish with cooking spray or line it with parchment paper.
Mix the flour, baking powder, and salt together in a large bowl. Set aside.
Add the butter, sugar, and brown sugar to a separate large mixing bowl and beat with a hand mixer or stand mixer for at least 2-3 minutes.
Mix in the vanilla and eggs and beat for another 2-3 minutes.
Add the flour mixture and mix just until combined.
Fold in the M&Ms and sprinkles.
Scoop the batter into the baking dish and spread it to the edges of the pan, pressing gently until the mixture is evenly spread in the pan. Add about a handful of additional M&Ms and sprinkles to the top of the blondies and bake for 25-30 minutes in the oven.
Allow the blondies to cool for at least 30 minutes before cutting them into 12 equal squares. Or, if you are impatient like I am, scoop them out with a spoon and eat them warm, being careful not to burn your tongue! And add a scoop of vanilla ice cream! 😉
