Ingredients

Sweet Potato Casserole:

  • 2 cups mashed sweet potatoes
  • ½ tsp salt
  • ¼ cup butter
  • ½ cup brown sugar*
  • 2 eggs
  • ¼ cup heavy cream
  • 1 tsp cinnamon
  • tsp allspice

Pineapple Topping:

  • ¼ cup flour
  • ½ cup brown sugar*
  • 1 egg
  • ¼ cup butter
  • 1 cup drained crushed pineapple
  • 2 cups mini marshmallows

Instructions

  • Prep: Preheat your oven to 350 degrees F. Then spray the inside of a 2-quart casserole dish with nonstick cooking spray and set it aside.
  • Also, cook the sweet potatoes in the oven or microwave and mash them to obtain the 2 cups needed for this recipe. Here is a great recipe for how to make mashed sweet potatoes, just leave out the added ingredients and only follow the baking instructions. You can also use a 29 oz can of yams instead! No prep, just drain & mash!
  • Sweet potato casserole: In a large mixing bowl, combine the mashed sweet potatoes, salt, butter, brown sugar, eggs, heavy cream, cinnamon and allspice. Stir well to combine all the ingredients together.
  • Then, transfer the mixture to the prepared casserole dish and set it aside.
  • Pineapple topping: In a large mixing bowl, stir together the flour and sugar until well mixed. Then, add in the butter and the egg, and then stir again. Next, fold in the drained, crushed pineapple.
  • Proceed to spoon the pineapple topping over the sweet potato mixture in the casserole dish.
  • Bake: Place the casserole dish into the preheated oven and bake for 30 minutes.
  • Remove the baking dish from the oven, sprinkle the top of the casserole with mini marshmallows, and then return the pan to the oven and bake until the marshmallows are lightly toasted. This should be about 5 minutes or so. Serve and enjoy!

Notes

Serves 12 generous side dish servings. 
*NOTE: If you prefer side dishes less sweet, you can cut the brown sugar in both the sweet potatoes and the topping in half! So you'd just use 1/4 cup in each, for a 1/2 cup total in the casserole. I love sweet potatoes, so using less sugar lets their flavor shine through more!
