White Chocolate Mousse made with just 5 ingredients: heavy cream, sugar, cream cheese, white chocolate and berries. Perfect light dessert with fantastic fresh berry flavors!
Chocolate prep: Melt the white chocolate slowly in a double boiler or in the microwave. If using microwave, heat on defrost for 3 minutes. Let sit 2 minutes, then stir gently, adding more time in 30 second increments, letting sit between each. Once melted and smooth, set aside.
Mousse components: In a mixing bowl, beat the heavy cream until soft peaks form. Gradually add the sugar, beating until stiff peaks form (typically takes 5-7 minutes). Transfer to another bowl.
With an electric mixer, beat the softened cream cheese until smooth and fluffy. While beating, slowly add in the melted white chocolate until fully incorporated. Then fold in the whipped cream.
Assemble: Transfer the mixture to a piping bag with an open star tip and pipe alternating layers of mousse and berries in parfait glasses. Garnish with additional berries if desired. Serve immediately or refrigerate for up to 3 hours. Enjoy!
