- 2 TBSP olive oil
- 1 lb ground beef chicken or turkey
- 1 oz taco seasoning mix
- ¼ cup tomato sauce
- 3 avocados halved
- 1 cup queso fresco or cotija cheese
- ¼ cup cherry tomatoes quartered
- ¼ cup lettuce shredded
Prep: Prepare all your favorite taco toppings. Dice the tomatoes into quarters and shred the lettuce. If you are adding olives or cilantro, dice those ingredients as well and set it all aside for later use.
Cook meat: In a large sauté pan, heat the olive oil on medium heat and add the ground beef (or whatever meat you chose). Sprinkle the meat with the taco seasoning and cook until it is no longer pink. Stir in the tomato sauce, mix to combine and cook to heat the sauce through. Remove from the heat and let cool slightly.
Assemble: Slice each avocado in half. Add a heaping tablespoon of the meat mixture to the avocado half. If you'd like to have more space for taco filling, you can scoop out some of the avocado.
Add a few tomato chunks, lettuce, sprinkle with queso fresco, and add any of your other favorite toppings. Serve and enjoy!
Stuffed Avocados are best enjoyed fresh, but they can be stored in the refrigerator for up to 24 hours.
It is not recommended to keep them for longer than that, as the avocados may start to brown and lose their texture.
