Ingredients

Strawberry Cheesecake Filling

Golden Oreo Truffles

  • 36 Golden Oreo cookies
  • 8 ounces cream cheese room temperature
  • cups white almond bark
  • pink food coloring

Optional Toppings

  • Golden Oreo crumbs from about 3 cookies
  • freeze-dried strawberries crushed

Instructions

Make the Strawberry Cheesecake Filling

  • Line a plate with parchment paper.
  • Beat the cream cheese until smooth, then mix in powdered sugar, strawberry jam, and vanilla until fully combined.
  • Scoop mixture into ½-teaspoon portions and place on the prepared plate.
  • Freeze for 45–60 minutes, until firm.

Make the Golden Oreo Truffles

  • Crush the Golden Oreos into fine crumbs using a food processor.
  • Beat the cream cheese until smooth, then mix in Oreo crumbs until fully combined (chill 15 minutes if soft).
  • Scoop about 1 tablespoon of mixture, flatten slightly, place a frozen cheesecake ball in the center, wrap, and roll smooth.
  • Place truffles on a parchment-lined plate and refrigerate for 15–20 minutes.

Coat the Truffles

  • Melt white almond bark in the microwave in 20–30 second intervals, stirring between each, until smooth.
  • Stir in pink food coloring a little at a time.
  • Dip each truffle into the melted chocolate, immediately sprinkle with Oreo crumbs and freeze-dried strawberries, and place on parchment to set.

Notes

  • Freezing Tip: Freezing the cheesecake centers keeps them from melting while shaping.
  • Texture Fix: If the Oreo mixture becomes too soft, chill briefly before rolling.
  • Dipping Tip: Use a fork or dipping tool to avoid fingerprints in the coating.
  • Storage: Store in the refrigerator for up to 5 days or freeze for longer storage; let sit at room temperature for a few minutes before serving.
