Golden Oreo Truffles
- 36 Golden Oreo cookies
- 8 ounces cream cheese room temperature
- 1½ cups white almond bark
- pink food coloring

Make the Strawberry Cheesecake Filling
Line a plate with parchment paper.
Beat the cream cheese until smooth, then mix in powdered sugar, strawberry jam, and vanilla until fully combined.
Scoop mixture into ½-teaspoon portions and place on the prepared plate.
Freeze for 45–60 minutes, until firm.
Make the Golden Oreo Truffles
Crush the Golden Oreos into fine crumbs using a food processor.
Beat the cream cheese until smooth, then mix in Oreo crumbs until fully combined (chill 15 minutes if soft).
Scoop about 1 tablespoon of mixture, flatten slightly, place a frozen cheesecake ball in the center, wrap, and roll smooth.
Place truffles on a parchment-lined plate and refrigerate for 15–20 minutes.
Coat the Truffles
Melt white almond bark in the microwave in 20–30 second intervals, stirring between each, until smooth.
Stir in pink food coloring a little at a time.
Dip each truffle into the melted chocolate, immediately sprinkle with Oreo crumbs and freeze-dried strawberries, and place on parchment to set.
