SPINACH SAUSAGE CASSEROLE

Ingredients

  • 6 oz box of herb-flavored stuffing mix
  • ½ lb. pork sausage
  • ¼ cup green onions chopped
  • 1 tsp garlic minced
  • 2 cups fresh spinach lightly packed
  • 1 ½ cups Monterey jack cheese shredded
  • 1 ½ cups milk
  • 3 large eggs
  • ¼ cup Parmesan cheese shredded

Instructions

  • Prep: Preheat oven to 400°F. Prepare the stuffing according to package directions.
  • Chop the onions and mince the garlic (if using fresh) and if the cheeses need to be shredded, get that done too.
  • Cook sausage: In a large skillet, crumble the sausage and begin to cook it over medium heat. Add in the onions and garlic; continue to cook until the meat is no longer pink. Drain the grease and set it aside.
  • Assemble: In a large bowl, combine the stuffing, sausage mixture and spinach. Transfer to a greased 11x7-inch baking dish; sprinkle with Monterey jack cheese.
  • In a small bowl, combine milk and eggs; pour over the sausage mixture.
  • Bake: Bake for 35-40 minutes or until a thermometer reads 160°. Sprinkle with parmesan cheese; bake 5 minutes longer or until bubbly. Enjoy!

Notes

Leftovers of Sausage Casserole should be stored in the refrigerator and will last for up to 3-4 days. Store the casserole in an airtight container or cover it tightly with plastic wrap.
