SOUTHWEST CREAM CHEESE DIP

Ingredients

  • 8 oz cream cheese softened
  • 1 cup sour cream
  • ½ cup salsa
  • 1 tablespoon of lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon cumin
  • ¼ teaspoon black pepper
  • 1 ½ cup shredded pepper-jack cheese
  • 1 cup canned black beans drained and rinsed
  • 1 cup canned corn drained
  • Sliced green onions for garnish
  • Chips crackers, or veggies of your choice for dipping

Instructions

  • In a medium sized bowl with an electric mixer, mix together the softened cream cheese and sour cream until smooth. 
  • Stir in the salsa and lime juice until incorporated, followed by the chili powder, paprika, garlic powder, onion powder, salt, cumin and black pepper.
  • Mix in the pepper-jack cheese, black beans and corn.
  • Spread the dip into a serving dish or bowl. Garnish with sliced green onions if desired.
  • Chill for at least 30-45 minutes before serving. The dip can be refrigerated for up to 3-4 days. Serve with crackers, chips, pretzels or veggies of your choice.
