  • 2 bananas very ripe
  • 3 eggs
  • ¾ cup self-rising flour


  • Puree the bananas in a blender until smooth. Add the eggs and mix until combined. Add in the flour and pulse just until combined.
  • Lightly grease a skillet or griddle and heat to about 350° (medium heat). Drop batter (about 1/3 cup) onto the hot skillet and cook for about 2-3 minutes or until tiny bubbles start to form. Flip the pancakes over and cook for another 1-2 minutes or until both sides are a light golden brown. This recipe should make about 6 large pancakes.
  • Serve with syrup or whipped cream and sliced bananas (and/or other fruit).
