In a large mixing bowl, combine the flour, sugar, salt, baking soda, and pumpkin pie spice.
Next, add in the eggs, pumpkin, and vegetable oil. Mix well.
Gently fold in the chopped apples.
In a small bowl combine the streudel topping and cut in the butter until it resembles coarse crumbs.
Spoon the batter into 24 paper lined muffin cups. Sprinkle the streudel topping over the top of each muffin.
Bake muffins at 350 for 35-40 minutes. Serve and Enjoy!
