Pumpkin Apple Streudel Muffins

Ingredients

  • 2 1/2 cup flour
  • 2 cups sugar
  • 1 tbsp pumpkin pie spice
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 2 eggs lightly beaten
  • 1 cup pumpkin
  • 1/2 cup vegetable oil
  • 2 cups finely chopped and peeled apples

Streudel Topping

  • 2 tbsp flour
  • 1/4 cup sugar
  • 1/2 tsp cinnamon
  • 4 tbsp butter

Instructions

  • In a large mixing bowl, combine the flour, sugar, salt, baking soda, and pumpkin pie spice.
  • Next, add in the eggs, pumpkin, and vegetable oil. Mix well.
  • Gently fold in the chopped apples.
  • In a small bowl combine the streudel topping and cut in the butter until it resembles coarse crumbs.
  • Spoon the batter into 24 paper lined muffin cups. Sprinkle the streudel topping over the top of each muffin.
  • Bake muffins at 350 for 35-40 minutes. Serve and Enjoy!
