Easy 10-Minute Tomato Basil Soup

Easy 10-Minute Tomato Basil Soup recipe made with San Marzano style tomatoes, broth, fresh basil & butter. Smooth & tangy tomato soup that comes together fast. Perfect for a quick weeknight meal or lunch.

Ingredients

  • 28 oz can Hunt's San Marzano Style whole tomatoes
  • 1 cup chicken broth
  • 1 TBSP brown sugar
  • 2 tsp onion powder
  • 8-10 fresh basil leaves*
  • 1/4 cup butter
  • 1/4 cup heavy cream optional

Instructions

  • Lightly drain tomatoes. Pour into large 2 quart bowl. (Make sure it can still fit in the microwave!)
  • Add in broth, brown sugar, onion powder & basil leaves. Gently stir. Cover & microwave for 5 minutes on high.
  • Remove cover. Add in butter. Let sit 3-4 minutes, until melted.
  • Puree soup using an immersion blender for 1 minute. Add cream if desired. Serve, garnished with an additional drizzle of cream & fresh basil.

Notes

*Can substitute 1 tsp dried basil instead of fresh basil leaves
