  • 1 1/2 cups old fashioned oats
  • 1 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 2 eggs
  • 1/3 cup pure pack pumpkin
  • 3/4 cup milk any type- your choice!
  • 2-3 TBSP honey
  • 1/2 tsp salt
  • Cinnamon Apple topping:
  • 2 apples peeled and diced
  • 2 TBSP honey
  • 2 TBSP water
  • 1/2 tsp cinnamon
  • 1/2 tsp cornstarch


  • Add oats to regular 24-oz Nutri Ninja cup. Blend until oats look more like flour- I just put it through an Ultra Blend cycle and pulsed a few times.
  • Add in remaining ingredients in order listed. Blend for an additional minute. (Again, I just used the Ultra Blend cycle, then pulsed a few times.)
  • Preheat griddle to about 350 degrees F. Pour about 1/3 cup of batter for each pancake. Flip after 2-3 minutes, once pancakes look dry around the edges. Cook an additional 2 minutes.
  • To make the cinnamon apples: Combine all ingredients in a small microwaveable bowl. Microwave for 1 minute 30 seconds. Stir.
  • Plate cooked pancakes and top with cinnamon apples and a dusting of powdered sugar, if desired.
