Add oats to regular 24-oz Nutri Ninja cup. Blend until oats look more like flour- I just put it through an Ultra Blend cycle and pulsed a few times.
Add in remaining ingredients in order listed. Blend for an additional minute. (Again, I just used the Ultra Blend cycle, then pulsed a few times.)
Preheat griddle to about 350 degrees F. Pour about 1/3 cup of batter for each pancake. Flip after 2-3 minutes, once pancakes look dry around the edges. Cook an additional 2 minutes.
To make the cinnamon apples: Combine all ingredients in a small microwaveable bowl. Microwave for 1 minute 30 seconds. Stir.
Plate cooked pancakes and top with cinnamon apples and a dusting of powdered sugar, if desired.
