- 2 cups Rice Chex cereal
- 2 cups Corn Chex cereal
- 2 cups mini pretzels
- ½ cup almonds
- ½ cup pecans
- ¼ cup butter melted
- 1 teaspoon vanilla extract
- ¼ cup maple syrup
- 1 tsp cinnamon
- 2 tsp pumpkin spice
- ½ cup butterscotch chips
Preheat the oven to 350° and line a baking sheet with parchment paper.
In a small mixing bowl, add the melted butter, vanilla, maple syrup, cinnamon, and pumpkin spice. Mix until fully blended.
Add the Chex cereals, pretzels, and nuts to a large bowl. Pour the butter mixture over the ingredients and stir using a wooden spoon until all ingredients are evenly coated with the butter mixture. It’s essential to mix gently to avoid breaking the cereal or pretzels.
Spread the mix evenly onto the lined baking sheet and cook for 10-12 minutes.
Remove from heat and stir gently using a wooden spoon to separate any pieces that are stuck together.
Allow to cool for about 10-15 minutes then add the butterscotch chips and stir all ingredients together until well combined. Be sure to allow the mix to cool completely before adding the butterscotch chips or they will melt. Serve immediately or store in a ziplock bag or airtight container for up to a week.
