Sauce:
- ¼ cup beef broth
- ¼ cup ketchup
- 1 TBSP brown sugar
- 1 TBSP Worcestershire sauce
- 1 tsp mustard
Prep: Heat the oven to 350°. Line a bread pan with parchment paper.
Meat mixture: Combine all the meatloaf ingredients together EXCEPT the cheese and parsley in a large bowl and mix well. I think it is easier to mix with your hands, it goes much faster and incorporates the ingredients well.
Press half the mixture in the pan. Place half of the cheese slices overlapping across the meatloaf. Press the remaining ground beef over the cheese.
Sauce: Combine the sauce ingredients together and pour over the meatloaf. Lay the remaining cheese overlapping on the top of the meatloaf.
Bake: Bake for 1 hour. Remove and allow to cool for 20 minutes, then lift from the pan and place on a serving plate. Slice, serve, and enjoy!
Store leftovers in an airtight container in the fridge for up to 5 days.
Freezing is also an option, extending its shelf life to about 2 to 3 months.
