Ingredients

Meatloaf:

Sauce:

  • ¼ cup beef broth
  • ¼ cup ketchup
  • 1 TBSP brown sugar
  • 1 TBSP Worcestershire sauce
  • 1 tsp mustard

Instructions

  • Prep: Heat the oven to 350°. Line a bread pan with parchment paper.
  • Meat mixture: Combine all the meatloaf ingredients together EXCEPT the cheese and parsley in a large bowl and mix well. I think it is easier to mix with your hands, it goes much faster and incorporates the ingredients well.
  • Press half the mixture in the pan. Place half of the cheese slices overlapping across the meatloaf. Press the remaining ground beef over the cheese.
  • Sauce: Combine the sauce ingredients together and pour over the meatloaf. Lay the remaining cheese overlapping on the top of the meatloaf.
  • Bake: Bake for 1 hour. Remove and allow to cool for 20 minutes, then lift from the pan and place on a serving plate. Slice, serve, and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 5 days. 
Freezing is also an option, extending its shelf life to about 2 to 3 months.
