Ingredients

  • .25 oz unflavored gelatin about 2 ½ tsp
  • 2 TBSP cold water
  • ¼ cup boiling water
  • 1 cup granulated sugar
  • 2 cups heavy whipping cream
  • 2 tsp vanilla extract
  • ¼ cup cocoa powder
  • 3 TBSP white chocolate pudding mix instant
  • ½ tsp peppermint extract
  • ½ cup crushed peppermint pieces

Instructions

  • Prep gelatin: Add cold water to a small bowl and sprinkle with gelatin. Let sit 2 minutes, then add boiling water and stir until gelatin is dissolved and mixture is clear. Set aside to cool slightly.
  • Whipped cream: In the bowl of an electric mixer, combine the sugar, heavy whipping cream, and vanilla extract. Beat on medium speed until stiff peaks form, scraping bowl occasionally. This typically takes about 5-7 minutes.
  • Pour in gelatin mixture and beat another minute.
  • Remove half the whipped cream mixture and set aside in a different bowl.
  • Create the mousse: To the remaining cream in the mixing bowl, add in dry white chocolate pudding mix and peppermint extract. Mix until thoroughly combined. Transfer to a piping bag and refrigerate.
  • Take the remaining cream and place it back in the mixing bowl. Add in the cocoa powder. Mix until thoroughly combined. Transfer to a piping bag.
  • Assemble: Gather 8 glasses about 1-1 ½ cups in size. Pipe a layer of the dark chocolate mousse first, then a layer of the white chocolate mousse. Top with some crushed peppermint candy pieces. Repeat with both mousse layers, ending with white mousse. Top with dark chocolate shavings and more peppermint candy pieces.
  • Refrigerate until ready to serve. If you're chilling the mousse cups for longer than an hour, gently lay a piece of plastic wrap over the tops until you're ready to serve. Enjoy!

Notes

Leftover chocolate mousse stores well in the refrigerator for up to three days.
To ensure freshness, cover the mousse with plastic wrap or an airtight lid. Avoid layering crushed candy until just before serving to maintain texture.
