Instructions

  • Prep: Spray the bottom of a microwave-safe mug lightly with non-stick spray. Dice the peaches into small pieces.
  • Batter: Add the flour, sugar, baking powder, and salt. Stir to combine. Add the milk, canola oil, and the vanilla and almond extracts. Use a rubber scraper to stir and fully incorporate the ingredients. Stir in the diced peaches.
  • Cook: Place the mug in microwave for 1:15 minute until cake is just set. Allow to rest in microwave for 1 minute.
  • Glaze: Place 1 TBSP powdered sugar in a small bowl. Add in 1 tsp hot water and a drop or two almond extract, then stir until smooth. Drizzle in thin lines over the surface of the cake. Top with a thin slice of fresh peach, if desired. Enjoy!

Notes

This single serving mug cake is meant to be made and enjoyed immediately. It will not store more more than 1 day without loosing it's texture.
