- 15 ½ oz sliced peaches chopped, about 2 ½ cups
- 6 oz peach or apricot gelatin
- ¼ cup sugar
- 2 cups boiling water
- ½ tsp almond extract
- 8 oz whipped topping
- Additional sliced peaches for garnish
Drain peaches. Chop the peaches into small pieces; set them aside. Spray a 6 cup Jell-o mold (or a bundt pan) liberally with non stick spray, set it aside. (Alternately, you can line the jello mold with plastic wrap and spray that instead. It makes for easier unmolding!)
In a large bowl, whisk the Jell-o and sugar in the boiling water until dissolved. Chill until slightly thickened.
Stir the almond extract into whipped topping; gently fold into the gelatin mixture. Now fold in the chopped peaches.
Pour the mixture into the prepared jello mold or bundt pan. Chill overnight or at least for 4 hours. Overturn it onto a serving platter; garnish with additional peaches if desired. Enjoy!
Store leftovers in an airtight container in the fridge for up to 1 week.
Freezing this dessert is not recommended.
