- 8 oz angel hair pasta
- ¼ cup green pepper chopped
- 1 large tomato seeded & diced
- 3 oz pepperoni sliced
- 4 oz ripe olives sliced
- ¼ cup Parmesan cheese grated
- 3 TBSP olive oil
- ½ tsp salt
- ¼ tsp garlic powder
Cook pasta according to package directions, adding green pepper during the last 2 minutes to soften it.
Meanwhile, in a serving bowl, combine the tomato, half the pepperoni, olives, Parmesan cheese, oil, salt, and garlic powder.
Drain pasta; add to the tomato mixture and toss to coat. Top with remaining pepperoni and more Parmesan cheese. Enjoy!
Leftover pasta should be stored in the refrigerator, in an airtight container, and it will last up to 3 days.
For longer storage, place it in a freezer-safe container. It is best enjoyed within 3 months of freezing to ensure optimal flavor and texture.
