  • Get started by preparing the chicken & hard boiled eggs, these need to be cooked and ready to start assembling the salad.
  • In a large bowl combine the cooked chicken, celery and eggs.
  • In a small mixing bowl whisk together the relish, mayonnaise, onion powder and pickle juice.
  • Combine the chicken mixture with the dressing mixture. Taste and add in salt and pepper to your preference.
  • Chill for a minimum 1-2 hours. Enjoy as a sandwich, in a lettuce wrap or on crackers.

Notes

Store leftovers in an airtight container in refrigerator for up to 3 days.
While it's possible to freeze chicken salad, it's generally not recommended due to potential changes in texture and taste after thawing. The mayonnaise-based dressing can separate and become watery, and the overall quality may decline.
