How to make Pecan Pralines

  • Prep: Heat the oven to 400°F and spread the pecans over a large cookie sheet.  Toast the pecans for 5 minutes, then stir and bake for another 5 minutes.
  • Line a large cookie sheet with wax or parchment paper and sprinkle the salt on the paper.
  • Candy syrup: Heat the brown sugar, heavy cream, butter, corn syrup, and baking soda together in a heavy-bottomed pan. Bring to a boil, stirring often until a candy thermometer reaches 235°. Remove the pan from the heat and stir in the pecans and vanilla extract.
  • Shape & cool: Stir continually until the candy begins to thicken, about 10 minutes. When it starts to lose its gloss, immediately spoon heaping tablespoons of candy onto the prepared pan.
  • Allow the candy to cool completely before serving. Enjoy!

Notes

Store pecan pralines in an airtight container to maintain freshness. If stored properly they will last 2-3 weeks.
