- 2 pounds boneless skinless chicken breasts cut into 1-inch pieces
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 cloves garlic minced
- ⅓ cup honey
- 3 tablespoons fresh lime juice about 2 limes
- 1 tablespoon lime zest
- 2 tablespoons soy sauce
- 1 teaspoon chili powder
- ½ teaspoon cumin
- 1 tablespoon butter
- Fresh cilantro and lime wedges for serving
Season chicken pieces with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer and cook for 5 to 6 minutes, turning occasionally, until golden brown and cooked through. Remove from the pan and set aside.
Reduce heat to medium. Add garlic and cook for about 30 seconds until fragrant.
Whisk together honey, lime juice, lime zest, soy sauce, chili powder, and cumin. Pour into the skillet and cook for 2 to 3 minutes, stirring, until the sauce thickens slightly.
Add butter and stir until melted. Return chicken to the pan and toss to coat.
Cook for 1 to 2 minutes more until heated through and well coated in the sauce.
Serve over rice with fresh cilantro and lime wedges.
