Ingredients

  • 2 pounds boneless skinless chicken breasts cut into 1-inch pieces
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cloves garlic minced
  • cup honey
  • 3 tablespoons fresh lime juice about 2 limes
  • 1 tablespoon lime zest
  • 2 tablespoons soy sauce
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • 1 tablespoon butter
  • Fresh cilantro and lime wedges for serving

Instructions

  • Season chicken pieces with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer and cook for 5 to 6 minutes, turning occasionally, until golden brown and cooked through. Remove from the pan and set aside.
  • Reduce heat to medium. Add garlic and cook for about 30 seconds until fragrant.
  • Whisk together honey, lime juice, lime zest, soy sauce, chili powder, and cumin. Pour into the skillet and cook for 2 to 3 minutes, stirring, until the sauce thickens slightly.
  • Add butter and stir until melted. Return chicken to the pan and toss to coat.
  • Cook for 1 to 2 minutes more until heated through and well coated in the sauce.
  • Serve over rice with fresh cilantro and lime wedges.
