  • Prep: Line a baking sheet with a piece of parchment paper, set it aside.
  • Filling: In the bowl of a stand mixer, fitted with a paddle attachment, combine the powdered sugar, cream cheese, peppermint extract, and salt. Beat the mixture on medium speed, for 2 minutes or until smooth.
  • Chocolate coating: In a separate bowl, combine the chocolate chips and shortening, then place it into the microwave and heat for 1 minute. Let it sit in the microwave for 2 minutes after heating, then stir gently. If the chocolate isn't melted after 1 minute, keep heating at 30-second intervals at a time, until melted and smooth.
  • Shape: Divide the filling it into 4 equal pieces. Place the pieces onto a clean surface dusted with powdered sugar. Roll each piece into logs about ½” in diameter, then cut each log into ½” pieces. Flatten each ½” piece between your fingers, gently shaping it into a disc.
  • Coat in chocolate: Dip each disc into the melted chocolate, then remove and place onto the prepared parchment-lined baking sheet. Continue to repeat this step with the remaining mint pieces. Pro Tip: Use a fork to retrieve the mint after it has been dipped into the chocolate. This will allow the excess chocolate to drip back into the bowl.
  • Allow the candies to cool and set before serving. You can let them set at room temperature or in the fridge to speed the process up a bit. Once cooled, serve and enjoy!
  • A Decorative Idea: This is completely optional, but once the chocolate on the mints has set, you may drizzle additional melted chocolate over the top for an extra element. Allow the chocolate to set before serving.

Notes

Homemade Junior Mints, when stored properly in an airtight container in the refrigerator, are good for 1 week.
