Grilled Italian Chicken and Pasta is a simple and delicious summertime dinner that is perfect for those warm evenings when you don't want to spend too much time in the kitchen. This dish is easy to make and uses Italian dressing to add fantastic flavor to the BBQ chicken and vegetables!

Ingredients

  • 2-3 boneless skinless chicken breasts pounded thin
  • 12 oz zesty Italian salad dressing half a 24-oz bottle, divided
  • 1 cup grape tomatoes
  • 2-3 zucchini cut into pieces
  • 6 ounces bow tie pasta half a 12oz box
  • ½ cup parmesan cheese
  • salt & pepper to taste

Instructions

  • Marinate: Pat your chicken dry with a paper towel. Then using a meat tenderizer, pound the chicken into thin, even pieces.
  • If you have the time, marinate the chicken in about ⅓ cup of the Italian dressing for 3-4 hours. If you don't have the time, combine the chicken and dressing and let it rest for 10-15 minutes.
  • Prep: Get your grill heating up. While that is preheating, heat up the water needed to boil your pasta in. Boil the pasta in salted water as directed on the package. Get the zucchini prepped as well, slice it into spears or cubes depending on your preference.
  • Grill : Place the chicken and zucchini on the preheated grill and cook for 5-7 minutes on both sides.
  • Sprinkle the salt and pepper over the top of the chicken while cooking and brush the chicken and zucchini with Italian dressing as it is grilling. Flip the chicken over and cook on the other side for 5-7 more minutes and brush with more Italian dressing.
  • Depending on the size of your chicken and zucchini, the veggies might take a little longer to cook than the chicken. The chicken is finished when it reaches 165 degrees F on an instant read thermometer.
  • Combine: Once the pasta is cooked, drain it and transfer it to a serving bowl. Pour in ¼ cup of Italian dressing and the grape tomatoes, toss well to combine. Add in the grilled zucchini, toss again. Just before serving, sprinkle the parmesan cheese over the top. Serve the pasta with the grilled chicken and enjoy!

Notes

Left over chicken & pasta will stay fresh for up to 3-4 days if stored in an airtight container in the refrigerator.
Reheat a single serving in the microwave or a larger portion in a frying pan on the stove.
