Ingredients

  • ½ pound ground beef
  • ½ tsp salt
  • ½ tsp garlic powder
  • 2 cups cottage cheese 2% or whole milk
  • ½ cup pepper jack cheese shredded
  • ½ cup cheddar cheese shredded
  • 2 Tbsp taco seasoning
  • ½ cup water
  • 4.5 oz can diced green chiles

Instructions

  • Cook the Beef: In a skillet over medium heat, cook the ground beef with the salt and garlic powder until browned. Drain the grease and set aside.
  • Blend the Base: In a blender, combine the cottage cheese, pepper jack cheese, cheddar cheese, taco seasoning, and water. Blend until smooth, scraping down the sides if needed.
  • Add the Flavor: Fold the diced green chiles into the blended cheese mixture.
  • Heat the queso: Stovetop Method: Pour the mixture into a skillet and heat over medium-low for about 5-6 minutes, stirring occasionally. Microwave Method: Microwave in 30-second intervals, stirring in between, for about 2-3 minutes or until hot.
  • Stir in the Beef: Once the queso is heated through, stir in the cooked ground beef.
  • Serve: Serve hot with tortilla chips, veggie sticks, or even drizzle over nachos or baked potatoes!
