- 2 cups cooked white rice
- 2 cups cooked ham diced
- 1 ½ cups peas fresh or frozen
- 10 oz cream of chicken soup
- ½ cup sour cream
- ½ teaspoon onion powder
- ¼ teaspoon ground black pepper
- 2 ½ cups shredded sharp cheddar cheese divided
Preheat oven to 350°F and grease a 9x13 baking dish.
Mix the ham, rice, peas, soup, sour cream, onion powder, black pepper, and 1 cup of shredded cheese in a large mixing bowl until combined.
Spread into your prepared baking dish and top with the remaining cheese.
Cover with foil and bake for 20 minutes. Remove foil and bake for another 5-10 minutes, until the cheese is melted through. Serve while hot.
Store leftovers in the refrigerator in an airtight container for up to 3-4 days.
This casserole can be frozen for up to 2-3 months in an airtight container or Ziplock bag.
