Ingredients

  • 2 cups Orzo pasta
  • 8 oz Mozzarella pearls
  • 1 cup cherry tomatoes sliced in half
  • ¼ cup basil finely chopped
  • ½ cup olive oil
  • ¼ cup balsamic vinegar
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ tsp garlic powder

Instructions

  • Cook the orzo pasta according to package instructions (approximately 7-10 minutes).
  • Drain the pasta and run under cold water. Set aside and allow to cool.
  • In a small mixing bowl, combine the olive oil, balsamic vinegar, salt, pepper, and garlic powder.
  • In a large mixing bowl, add the orzo, mozzarella, tomatoes, basil, and dressing mixture.
  • Using a large spoon, mix until all ingredients are thoroughly combined. Serve immediately or refrigerate until ready to serve. The salad is fantastic when served at room temperature or chilled. Leftovers can be stored for up to 3 days in the refrigerator.
