Blueberry French Toast (Martha White Style)

Ingredients

  • 7 oz package of Martha White® Blueberry Cheesecake Muffin Mix
  • 3 large eggs beaten
  • 3 TBSP butter
  • cups milk ⅓-½ cup
  • 8 slices French bread ½ to ¾-inch thick

Blueberry Sauce

  • 2 cups blueberries fresh or frozen
  • 1 cups water
  • ¼ cups sugar
  • 1 TBSP lemon juice
  • 2 TBSP jam

Instructions

  • Blueberry Sauce: In a saucepan, combine the washed/destemmed blueberries and water. Add in the sugar, lemon juice, and jam. Place the pot over medium heat and bring to a boil. Continue to cook until the mixture has thickened, while stirring occasionally.
  • Reduce the heat to low and simmer to keep warm while you prepare the French toast.
  • French toast coating: Add the muffin mix to a shallow bowl or pie plate that the bread slices will fit in. Stir in the eggs and enough milk to turn it into a thin batter.
  • Cook: In a nonstick skillet, melt one tablespoon of butter over medium heat on the stove. Dip the bread into the prepared batter and turn it over to coat both sides.
  • Place your egg covered bread into the preheated skillet and cook for 2-3 minutes on each side until the bread is golden brown. When making multiple slices, you can place them into the oven to keep warm after they're finished.
  • Repeat the process with the remaining bread, using butter for the skillet, as needed. Serve topped with your homemade blueberry sauce and enjoy!

Notes

Cooked French toast can be stored in the fridge for 3–5 days if covered and in an airtight container.  To reheat, you can gently warm it in the microwave, pan-fry it on the stove, or put it in the toaster or oven
