Ingredients

  • 6 tostada shells
  • Olive oil spray
  • 3 cups rotisserie chicken shredded
  • 1 cup of BBQ Sauce
  • 1 cup mozzarella cheese shredded
  • 1 cup colby jack cheese shredded
  • cup green onions chopped
  • cup cilantro chopped
  • Additional garnishes: Diced tomatoes avocados, sour cream, more BBQ sauce, ranch dressing, etc.

Instructions

  • Preheat the oven to 350°.
  • Line a baking sheet with parchment paper.
  • Place tostada shells onto a baking sheet. Lightly spray each shell with olive oil.
  • In a medium-sized mixing bowl, combine shredded chicken and BBQ sauce. Mix until chicken is evenly coated.
  • Using a spoon, scoop the mixture onto each tostada.
  • Top tostadas with even amounts of cheese, and cook for 6 minutes or until cheese is melted.
  • Remove from the oven and add green onions, cilantro, and sour cream, if desired. These tostadas are best served warm.
