- 21 oz banana bread cubed into 1 inch pieces
- 2 cups whole milk
- 1 cup heavy cream
- 4 eggs
- ⅓ cup brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- ½ cup caramel sauce optional
Prepare the baking dish: Grease a 10-inch square baking dish with nonstick cooking spray. Arrange cubed banana bread evenly in the dish.
Make the custard: In a large bowl, whisk together milk, cream, eggs, brown sugar, cinnamon, vanilla, and salt until well combined.
Soak the bread: Pour the custard mixture over the banana bread cubes, making sure all pieces are evenly coated. Cover with foil and refrigerate for at least 30 minutes to allow the custard to soak in.
Bake the pudding: Preheat oven to 350°F. Keep the pudding covered and bake for 1 hour, or until the custard is set and slightly jiggly in the center.
Serve: Let it cool slightly before serving. Drizzle with caramel sauce and top with banana slices or a scoop of vanilla ice cream.
