Preheat the oven to 375°F.
Make the shortcake dough. In a large bowl, combine flour, 2 Tbsp sugar, baking powder, cinnamon, and salt. In a separate bowl, stir together cream and ½ cup melted butter. Mix into dry ingredients until just moistened.
Shape and bake. Drop dough by ¼ cupfuls onto a greased baking sheet, spacing about 2 inches apart. Brush with remaining butter and sprinkle with remaining sugar. Bake for 18–20 minutes until golden.
Prepare the apple filling. In a large skillet, melt the cubed butter over medium heat. Add sliced apples and sauté until tender. Stir in brown sugar, cinnamon, and nutmeg until apples are coated and the sauce thickens slightly.
Assemble shortcakes. Split warm shortcakes in half horizontally. Spoon the apple mixture over the bottom half, then place the top back on.
Serve. Add a scoop of vanilla ice cream or whipped cream for the perfect finishing touch.
