- ¾ cup butter softened to room temperature
- 8 oz cream cheese softened to room temperature
- 1 ½ cups sugar
- 2 large eggs lightly beaten
- 2 tsp vanilla
- 1 cup mashed bananas about 2 medium bananas
- 3 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 1 ½ cups chopped strawberries
Grease 2 loaf pans (8X5) and preheat oven to 350°.
In a large bowl, use an electric mixer to beat the butter, cream cheese and sugar together for 3-4 minutes.
Add eggs, vanilla and mashed bananas. Mix for another 1-2 minutes.
In a separate bowl, mix the flour, baking soda, baking powder and salt. Once mixed, add to the wet ingredients and stir together just until combined. Fold in the chopped strawberries.
Pour batter into the prepared loaf pans. If desired, sprinkle a little extra sugar on top. Bake for 60 minutes or until a toothpick inserted in the middle of each loaf comes out clean. Place the pans on a wire rack to cool for about 15 minutes. Remove loaves from pans to continue cooling on the wire racks until completely cooled.
